Fish Cake in Honor of St. Peter and Paul

 

 

Cake:

Use your favorite cake recipe to make 2 9x2-inch round cake pans.

When cakes are cool, cut a quarter wedge from 1 cake round and then cut it through the middle horizontally to create 2 thin layers. Use these layers to form 1 side fin and a mouth for fish. Cut remaining 3/4 cake round decoratively into 2 fins (top and tail).

Frosting:

Use your favorite frosting recipe. Transfer 3/4 cup of frosting to a bowl. With a spatula, spread cake round with a thin coat of frosting. Attach thick fins to top and one edge of cake (see photo for shape) with frosting. Attach lips and side fin in the same manner. Spread a thin coat of frosting all around fins and lips. Chill cake for 20 minutes or until frosting is firm. Spread cake with enough of remaining frosting to coat completely. With a knife or frosting spatula carve wavy lines in tale and fins

Decorate:

Gummy apple rings or any gummy rings. The new Lifesaver gummy rings work well especially if you want a colorful fish. Cut them in half and layer across body.

Jelly beans - place in the half circle of the gummy rings

Sour gummy dots- use for eye and water bubbles for presentation.
